For those who garden and are overwhelmed by zucchini. Or anyone who just wants to try it.

Zucchini Pie

4 cups cubed zucchini
1 small chopped onion
1 cup Bisquick
4 large eggs
1/2 cup oil
1 tsp parsley
1/8 tsp pepper, salt and garlic powder
1/2 cup of shredded mozzarella or cheddar
1/2 cup grated Parmesan
Optional - add in diced or mini pepperoni or chopped ham

In large bowl beat eggs, add in all other ingredients and mix well. Pour into a buttered 12 inch pie plate. Cook at 350 degrees for about 45 minutes.

Paula Deans Crock Pot Mac n Cheese

2 cups uncooked elbow macaroni
4 tablespoons butter
2 1/2 cups grated sharp cheddar cheese
3 eggs (I omitted the eggs)
1/2 cup sour cream
1 (10 3/4 ounce) can condensed cheddar cheese soup
1/2 teaspoon salt
1 cup whole milk
1/2 teaspoon dry mustard
1/2 teaspoon black pepper
Directions:
 
1 Boil the macaroni in water for six minutes. Drain.
2 In a medium saucepan, mix butter and cheese. Stir until the cheese melts.
3 In slow cooker, combine cheese mixture and add the eggs (I omitted the eggs), sour cream, soup, salt, milk, mustard and pepper. Add the drained macaroni and stir again.
4 Cook on low for 2 1/2 hours, stirring occasionally.

Asparagus Stirfry

  • 2 tablespoons soy sauce
  • 2 teaspoons sugar
  • 2 tablespoons oriental sesame oil
  • 2 large garlic cloves, chopped
  • 2 pounds asparagus, ends trimmed, cut on diagonal into 2-inch-long pieces
  • 4 teaspoons sesame seeds

**  I added some crushed red pepper and slivered almonds

Stir soy sauce and sugar in small bowl until sugar dissolves. Heat oil in heavy large skillet. Add garlic and stir 15 seconds. Add asparagus and stir-fry until crisp-tender, about 4 minutes.
Add soy mixture and toss until asparagus is coated, about 1 minute longer. Season with salt and pepper. Transfer to bowl; sprinkle with sesame seeds and serve.


I made this a couple days ago with rice and grilled chicken it was so good!

Roasted Cabbage

Ingredients 1 (approx 2lb) head of organic green cabbage, cut into 1″ thick slices

1.5 tablespoons olive oil 2 to 3 large garlic cloves,

smashed kosher salt freshly ground black pepper spray olive oil OR non-stick cooking spray

Instructions: 1. Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1″ thick slices. 2. Rub both sides of cabbage with smashed garlic. 3. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices. 4. Finally, sprinkle each side with a bit of kosher salt and freshly cracked black pepper. 5. Roast on the middle rack for 30 minutes. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy. Serve hot and Enjoy!
